The beauty of this recipe lies in its simplicity and the speed with which it can be whipped up, making it perfect for busy weeknights or lazy weekends.

Ingredients ForRice Noodles

  • 200g rice noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 100g broccoli florets
  • 100g snow peas, trimmed
  • 200g tofu
  • 3 tablespoons soy sauce (or tamari for gluten-free option)\
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • Salt and pepper to taste
  • Chopped green onions and sesame seeds for garnish

Rice Noodles – Recipe Instructions:

  1. Prepare Rice Noodles: Place the rice noodles in a large bowl and cover with hot water. Let them soak for about 10-15 minutes or until they are soft but still slightly firm. Once softened, drain and set aside.
  2. Prepare Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, and brown sugar. Set aside.
  3. Cook Protein (if using): If you’re using tofu, heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu slices and cook until browned and cooked through. Remove from the skillet and set aside.
  4. Stir-Fry Vegetables: In the same skillet or wok, heat the remaining tablespoon of vegetable oil over medium-high heat. Add minced garlic and sliced onion, stir-frying for 1-2 minutes until fragrant.
  5. Add Vegetables: Add sliced bell pepper, julienned carrot, broccoli florets, and snow peas to the skillet. Stir-fry for another 3-4 minutes or until the vegetables are tender-crisp.
  6. Combine Ingredients: Add the cooked rice noodles and protein (if using) back into the skillet with the vegetables. Pour the prepared sauce over the noodles and toss everything together until well combined. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  7. Serve: Transfer the rice noodles stir-fry to serving plates or bowls. Garnish with chopped green onions and sesame seeds for an extra burst of flavor and texture.

Nutrition Advantages

Rice noodles are naturally gluten-free, making this dish suitable for those with gluten intolerances or celiac disease. Additionally, the abundance of vegetables provides a wealth of vitamins, minerals, and dietary fiber, contributing to overall health and well-being.

Recipe Alternatives for Dietary Restrictions

  • For gluten-free: Use tamari instead of soy sauce and ensure all other ingredients are gluten-free.
  • For vegan: Use tofu as the protein option and ensure oyster sauce is replaced with vegan oyster sauce or hoisin sauce.

Tips for Improvement

  • Experiment with different vegetable combinations based on your preferences or what’s in season.
  • Adjust the level of spiciness by adding chili flakes or sriracha sauce to the sauce mixture.
  • For added protein, you can also include shrimp, beef, or pork in place of tofu.
  • To enhance the flavor, consider marinating the protein in the sauce mixture for 30 minutes before cooking.

Now, enjoy your delicious and customizable rice noodles stir-fry!
